Today, I will share with you how to make asun at home in a simple and easy steps. First of all, asun is simply a delicious spicy Nigerian grilled or barbecued goat meat used as starters. If you have not eating asun, then you probably have not enjoyed goat meat.
There are lots of ways to enjoy asun but my favorite way is to pair it with a boiled white rice. However, some people will rather eat the asun with a chilled juice or beer.
Also, asun is so versatile that you simple need it for a starter just to wake your appetite before the main meal. This dish is so colorful, appetizing and delicious that you just want to eat is always.
How To Make Asun At Home
First start by burning the goat skin to generate that intense goatee signature flavor. After that, cut the goat meat into tiny pieces. Make sure you cut the it with the goat skin. Because the the real taste of asun is in the combination bite of the meat and skin.
If the skin is not there, it is no longer asun you are eating. So, after cutting it, wash and put the goat meat into a bowl and spice it with ingredients of your choice. For example you may choose to add thyme, garlic, ginger and seasoning cubes.
Just crush stock cubes into the bowl and mix everything for about a minute. Next cover the bowl with a cling film and then put it in the fridge to marinate.
You may marinate the goat meat for about 1 hour or the number of hours you chose to. Even more, you can choose to marinate it over night. However, if you do not have the time to marinate it. Then, just go straight ahead and cook the goat meat, it will still be delicious.
Next you want to put the marinated goat meat in a pot or you can use a pressure cooker if you have one. Because goat meat is quite tough and you will save lots of gas and and time with the use of pressure cooker.
Male Goat Taste A Lot Better
Anyways not all goat meat is tough, it is the female ones that are largely tough. This is because they are usually way older than the male goats. As you may know, the male goats are usually eating immediately they are matured.
In addition, the male goat really taste a lot better and have more flavour than the female goat. I have no idea why it is so but that is my own personal observation.
Also add some water to just half of the level of the goat meat, add salt and sliced onion. And then cook it on a medium heat until it is soft and tender.
Certainly, you do not want a lot of water because you want the water to dry up by the time the goat meat is well done. Therefore add a very little amount of water or try not to add at all, as the goat meat will generate enough water to cook it.
How To Make Asun With Oven At Home
When the goat meat is cooked and the water is not not dried, you can either remove the stock for later use or
Increase the heat to a higher temperature until the stock water dries out.
Also you may want to stir it at interval to avoid the goat meat from getting burned. I recommend you let the stock water get absorbed by the goat meat because you don’t want to lose any flavor out.
Next put the goat meat on a single layer in the oven tray or baking dish. Then
Grill it in the oven at 180°C or 350°F for 10 to 15 minutes or till the meat is brown .
You will need to turn them from time to time so it does not get burned on one side. Note that you do not want the meat to dry out with no moisture in it at all.
Finally, fry the roughly chopped pepper, onions, spices and mix the oven grilled goat meat in it. And here you have just learned how to make asun at home.
How To Make Asun Without Oven
So to make asun without oven is the simplest and easiest way to make asun. First of all, burn the skin of the goat meat with fire to generate flavour.
After that, remove the bones, wash and cut the goat meat into small pieces. Then put all of them in a pot, add seasoning cubes, salt, pepper, onion. Also, add every other ingredients you like to add including crayfish and water.
Cook the goat meat until it is tender on a low flame. Once the goat meat is cooked, fry the roughly chopped pepper and onion in a vegetable oil. Add seasoning cubes to taste, salt and other spices and herbs you like.
Lastly, add the onion, green, red and yellow bell peppers that you have cut into stripes and stir. Then pour the cooked goat meat into the pepper sauce and fry it for 6 to 10 minutes. In addition, ensure to drain off any water from the goat meat if it didn’t get dried up while cooking.
Onions and pepper are the major ingredients that makes authentic asun. Now here is where the trick is, if you do not like lots of pepper.
For example, if you live in the abroad where the pepper is too hot. Just take one or two of the hot pepper, then add pointed sweet pepper to it.
So, at this point, remove the seed of the sweet pepper, and blend it with the hot pepper. Certainly, this is going to add lots of flavour and colour to the asun.
Most importantly, you want to coarsely blend the peppers and onion to give you that real asun look.
Ingredients For Asun
- Goat meat (cut with the skin)
- Scotch bonnet or habanero peppers
- Red onions ( a lot of it)
- Bouillon cubes
- Vegetable oil
- Salt to taste
- Black pepper (optional)
- Green bell pepper
- Red bell pepper
- Yellow Bell pepper
- Peel and cut some onions into stripes, also cut the green, red and yellow pepper into stripes and set them aside
- Wash the habanero pepper, peel the onions and give them a rough chop in a blender
- Pour some vegetable oil in a frying pan, pour the chopped onions and pepper in it and fry it for 7 to 10 minutes
- Add salt, black pepper, seasoning cubes and any other spices and herbs you want to add
- Mix it well, then pour the bell peppers and onions you have already cut into stripes
- Put the oven grilled goat meat in it and stir it for 2 to 5 minutes and the yummy asun is ready.
So, this is how to make asun at home with an oven. However, you can make it without oven. All you need to do is go ahead and put the cooked goat meat into the pepper sauce and stir fry it foe some minutes.
